.gitlab-ci: Add an example iOS cross file This should be generated based on the available SDK versions and the iPhone version you want to target, but that's something we can do when adding macOS and iOS CI.

ci: growing_stack should be true for android and ios We can't run this test when cross-compiling, but we know what this should be on Android and iOS.
