tests: Use atomics for shared data in gdbus-connection test
D-Bus filter functions run in a worker thread. The `gdbus-connection` test was sharing a `FilterData` struct between the main thread and the filter function, which was occasionally (on the order of 0.01% of test runs) causing spurious test failures due to racing on reads/writes of `num_handled`.
